- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, pepper, and paprika until evenly coated.
- Arrange sweet potato slices in a single layer on the baking sheet.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- Remove from oven and transfer to a serving plate.
- Drizzle honey over the warm sweet potato rounds.
- Sprinkle crumbled feta on top.
- Garnish with chopped parsley or thyme if desired and serve immediately.
