Sweet Potato Rounds
  • 2 large sweet potatoes peeled and sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp paprika optional
Topping
  • 0.25 cup crumbled feta cheese
  • 2 tbsp honey
  • 1 tbsp chopped fresh parsley or thyme optional for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, pepper, and paprika until evenly coated.
  3. Arrange sweet potato slices in a single layer on the baking sheet.
  4. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  5. Remove from oven and transfer to a serving plate.
  6. Drizzle honey over the warm sweet potato rounds.
  7. Sprinkle crumbled feta on top.
  8. Garnish with chopped parsley or thyme if desired and serve immediately.

Notes

For extra flavor, sprinkle with chili flakes or substitute feta with goat cheese. Serve as an appetizer or side dish.
