  • 1 pint cherry tomatoes halved
  • 6-8 cloves garlic unpeeled
  • 3 tbsp olive oil
  • 12 oz spaghetti
  • ¼ cup grated Parmesan cheese

Method
 

  1. Roast cherry tomatoes and garlic with olive oil at 400°F until caramelized.
  2. Cook spaghetti according to package instructions, reserving ½ cup pasta water.
  3. Mash roasted garlic and tomatoes, stir in optional balsamic vinegar.
  4. Toss cooked pasta with roasted tomato-garlic mixture, adding pasta water as needed.
  5. Top with Parmesan cheese and fresh basil before serving.

Notes

Adjust consistency with reserved pasta water for saucy pasta.
