Ingredients
  

Crispy Rice
  • 2 cups cooked sushi rice cooled
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 0.5 tsp salt
Salmon Topping
  • 8 oz salmon sushi-grade, diced
  • 2 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1-2 tsp sriracha to taste

Equipment

  • Skillet
  • Mixing bowls

Method
 

  1. Season cooked rice and press into tray.
  2. Chill rice until firm, then cut into pieces.
  3. Fry rice until golden and crispy.
  4. Mix salmon with sauce ingredients.
  5. Top crispy rice with salmon mixture.
  6. Garnish and serve immediately.

Notes

Serve immediately for best texture. Rice can be prepped ahead and fried just before serving.
