Ingredients
  

Pastry
  • 2 sheets puff pastry thawed
  • 1 egg for egg wash
Filling
  • 4 eggs
  • 2 tbsp milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup shredded cheese cheddar or mozzarella
  • 0.75 cup cooked sausage or bacon crumbled

Method
 

  1. Preheat oven to 375°F (190°C) and line baking sheet.
  2. Lightly scramble eggs with milk, salt, and pepper.
  3. Cut puff pastry into equal rectangles.
  4. Place egg mixture, cheese, and sausage on half of the pastry pieces.
  5. Top with remaining pastry, seal edges with fork.
  6. Brush with egg wash.
  7. Bake 18–22 minutes until golden.
  8. Cool slightly before serving or storing.

Notes

Freeze fully baked pastries for easy weekday breakfasts.
