Method
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, melt the butter. Add sliced onions and cook slowly until golden and caramelized, about 15–20 minutes, stirring occasionally.
- Add garlic (if using), thyme, Worcestershire sauce, salt, and pepper. Cook for 2 more minutes, then remove from heat and let cool slightly.
- Mix the sausage meat with the cooled onion mixture in a bowl until combined.
- Roll out puff pastry. Spread sausage mixture along center. Fold over and seal edges with water. Cut into 8–10 rolls.
- Brush rolls with egg wash.
- Bake 20–25 minutes until pastry is puffed and golden. Let cool slightly before serving.
Notes
Serve with mustard or aioli. Can be made ahead and frozen before baking.
