Ingredients
  

Pastry & Base
  • 1 sheet puff pastry thawed
  • 1 egg beaten for egg wash
  • 1 tsp water
Filling
  • 1 lb sausage meat pork or beef
  • 2 medium onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • 1 tsp Worcestershire sauce
  • salt and pepper to taste
  • 1 clove garlic minced, optional

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt the butter. Add sliced onions and cook slowly until golden and caramelized, about 15–20 minutes, stirring occasionally.
  3. Add garlic (if using), thyme, Worcestershire sauce, salt, and pepper. Cook for 2 more minutes, then remove from heat and let cool slightly.
  4. Mix the sausage meat with the cooled onion mixture in a bowl until combined.
  5. Roll out puff pastry. Spread sausage mixture along center. Fold over and seal edges with water. Cut into 8–10 rolls.
  6. Brush rolls with egg wash.
  7. Bake 20–25 minutes until pastry is puffed and golden. Let cool slightly before serving.

Notes

Serve with mustard or aioli. Can be made ahead and frozen before baking.
