Potatoes
  • 4 russet potatoes large
Filling
  • 1 lb ground beef or lamb
  • 1 cup peas and carrots frozen
  • 1 cup beef broth

Method
 

  1. Bake potatoes until tender.
  2. Cook meat with onion, garlic, and seasonings.
  3. Add broth and vegetables and simmer.
  4. Stuff potatoes with filling and top with mashed potatoes.
  5. Bake until heated through and lightly golden.
