- Brown beef in olive oil and transfer to slow cooker.
- Add vegetables, barley, tomato paste, seasonings, and broth.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Remove bay leaves, adjust seasoning, and serve hot.
Notes
Soup thickens as it sits. Add extra broth when reheating if needed.
