Ingredients
  

  • 1.5 lb beef chuck cubed
  • 0.75 cup pearl barley rinsed
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 8 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Equipment

Method
 

  1. Brown beef in olive oil and transfer to slow cooker.
  2. Add vegetables, barley, tomato paste, seasonings, and broth.
  3. Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  4. Remove bay leaves, adjust seasoning, and serve hot.

Notes

Soup thickens as it sits. Add extra broth when reheating if needed.
