Ingredients
  

Casserole Base
  • 2 15 oz cans creamed corn
  • 1 15 oz can whole kernel corn drained
  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 0.5 cup unsalted butter melted
  • 1.5 cups shredded cheddar cheese
  • 2 eggs large
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika optional

Method
 

  1. Spray slow cooker insert with nonstick cooking spray or lightly butter.
  2. In a large bowl, mix creamed corn, drained corn, cream cheese, sour cream, melted butter, cheddar, eggs, salt, pepper, and paprika.
  3. Pour mixture into prepared slow cooker and spread evenly.
  4. Cover and cook on low for 2–3 hours until edges are set and top is lightly golden.
  5. Scoop into serving dishes and garnish with parsley or extra cheese if desired.

Notes

Check after 2 hours to avoid overcooking; slow cookers vary.
