Ingredients
  

Main
  • 2 cups sushi rice cooked and cooled
  • 8 oz imitation crab meat shredded
  • 2 tbsp mayonnaise
  • 1-2 tsp sriracha adjust to taste
  • 1 avocado sliced
  • 1 cup shredded carrots
  • 1 cup cucumber thinly sliced or ribboned
  • 0.5 cup edamame shelled
  • 1 tsp sesame seeds
  • 1-2 sheets nori cut into strips, optional
  • soy sauce for serving
  • pickled ginger for garnish, optional

Method
 

  1. Mix shredded imitation crab with mayonnaise and sriracha in a bowl.
  2. Place sushi rice in serving bowls as the base.
  3. Layer avocado slices, shredded carrots, cucumber ribbons, and edamame over the rice.
  4. Top each bowl with the spicy crab mixture.
  5. Sprinkle sesame seeds, add nori strips if desired, and serve with soy sauce and pickled ginger.

Notes

For extra flavor, add a drizzle of sesame oil or sriracha mayo on top.
