- In a medium bowl, combine soy sauce, sesame oil, brown sugar, garlic, ginger, and black pepper. Add beef slices and marinate for 30–60 minutes.
- Heat skillet over medium-high heat. Cook beef in batches for 2–3 minutes per side until browned and caramelized.
- Briefly sauté kimchi in the same skillet for 1–2 minutes until softened.
- Split hoagie rolls and layer with cheese, bulgogi beef, and kimchi. Optional: drizzle with spicy mayo.
- Place sandwiches under broiler 1–2 minutes until cheese melts.
- Sprinkle green onions and sesame seeds on top. Serve immediately.
Notes
Marinate beef overnight for deeper flavor. Use a broiler or oven to melt cheese quickly.
