Ingredients
  

Meatballs
  • 1.5 lb ground beef
  • 4 oz cream cheese softened
  • 1 cup Mexican blend cheese shredded
  • 1 jalapeño finely diced
  • 2 eggs
  • 0.75 cup breadcrumbs

Equipment

  • Mixing bowls
  • Deep skillet or pot
  • Wire rack

Method
 

  1. Mix all meatball ingredients in a large bowl until combined.
  2. Form mixture into evenly sized balls.
  3. Roll balls lightly in breadcrumbs.
  4. Heat oil to 350°F (175°C).
  5. Fry donkey balls until golden and cooked through.
  6. Drain and garnish before serving.

Notes

Serve with chipotle crema or salsa.
