Ingredients
  

Pasta & Sauce
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 0.5 tsp red pepper flakes
  • 0.25 cup vodka
  • 14 oz crushed tomatoes
  • 0.5 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • to taste salt and black pepper
  • fresh parsley for garnish

Method
 

  1. Cook penne pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet. Sauté onion 3–4 minutes until translucent.
  3. Add garlic and red pepper flakes. Cook 30 seconds.
  4. Pour in vodka, scraping the pan, and simmer 2–3 minutes.
  5. Add crushed tomatoes and simmer 5–6 minutes.
  6. Stir in heavy cream and parmesan cheese. Season with salt and black pepper.
  7. Toss cooked penne in sauce. Add optional protein if desired.
  8. Serve hot, garnished with parsley and extra parmesan.

Notes

For extra spice, increase red pepper flakes. Add reserved pasta water for creamier consistency.
