Ingredients
  

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
  • 1 cup lentils dried
  • 15 oz butter beans canned, drained

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Sauté vegetables in olive oil until softened.
  2. Add spices, lentils, and broth and simmer.
  3. Stir in butter beans and spinach.
  4. Season and serve.

Notes

Finish with lemon juice for brightness.
