Ingredients
  

  • 2.5 lbs red potatoes cubed
  • 0.75 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 0.25 cup chives chopped

Method
 

  1. Boil potatoes until fork-tender and drain.
  2. Mix dressing ingredients in a bowl.
  3. Toss warm potatoes with dressing.
  4. Fold in cheese and bacon.
  5. Chill before serving.

Notes

Best served slightly chilled or at cool room temperature.
