Ingredients
  

Chicken & Glaze
  • 4 chicken thighs bone-in, skin-on
  • 1 cup apple cider
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 clove garlic minced
  • salt & pepper to taste
Crisp Autumn Slaw
  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 0.5 cup carrots julienned
  • 1 apple thinly sliced
  • 0.25 red onion thinly sliced
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp honey
  • salt & pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Sear chicken skin-side down in a skillet until golden brown.
  4. Flip chicken and cook 2–3 minutes.
  5. Whisk together apple cider, honey, Dijon mustard, soy sauce, and garlic.
  6. Pour glaze over chicken.
  7. Roast in oven 20–25 minutes, basting halfway.
  8. Combine slaw ingredients in a bowl.
  9. Whisk dressing and toss with slaw.
  10. Remove chicken and let rest 5 minutes.
  11. Serve chicken with autumn slaw.

Notes

Best served fresh. Slaw can be prepped ahead and stored in refrigerator. Adjust glaze sweetness to taste.
