Ingredients
  

Truffle Base
  • 2 cups vanilla cake crumbs
  • 1 cup freeze-dried strawberries crushed
  • 4 oz cream cheese softened
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt optional
Coating
  • 1.5 cups white chocolate melted
  • 0.25 cup freeze-dried strawberry crumbs for topping

Method
 

  1. Crumble vanilla cake into fine crumbs in a large bowl.
  2. Mix in crushed freeze-dried strawberries.
  3. Beat cream cheese, powdered sugar, vanilla, and salt until smooth.
  4. Combine cream mixture with crumbs to form a soft dough.
  5. Chill mixture for 20–30 minutes.
  6. Roll dough into small bite-sized balls.
  7. Freeze truffles for 15 minutes to firm up.
  8. Dip each truffle in melted white chocolate.
  9. Sprinkle with strawberry crumbs and let set.

Notes

Keep refrigerated until serving. Can be frozen up to 2 months. Add coconut oil to chocolate if dipping feels thick.
