- Crumble vanilla cake into fine crumbs in a large bowl.
- Mix in crushed freeze-dried strawberries.
- Beat cream cheese, powdered sugar, vanilla, and salt until smooth.
- Combine cream mixture with crumbs to form a soft dough.
- Chill mixture for 20–30 minutes.
- Roll dough into small bite-sized balls.
- Freeze truffles for 15 minutes to firm up.
- Dip each truffle in melted white chocolate.
- Sprinkle with strawberry crumbs and let set.
Notes
Keep refrigerated until serving. Can be frozen up to 2 months. Add coconut oil to chocolate if dipping feels thick.
