Ingredients
  

Bagel Filling
  • 4 large bagels plain, sesame, or everything
  • 4 oz cream cheese softened
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 4 smoked salmon slices optional
  • 2 tbsp butter
  • 2 tbsp fresh chives chopped
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice bagels horizontally and scoop out some inner bread to make space for filling.
  3. In a bowl, beat eggs with salt and pepper. Mix in shredded cheese, chives, and cream cheese.
  4. Add smoked salmon pieces if desired. Spoon filling evenly into bagels.
  5. Place stuffed bagels on baking sheet and bake 15–18 minutes until eggs are set.
  6. Optionally broil 1–2 minutes for a golden top. Serve warm.

Notes

Prepare bagels ahead and refrigerate; bake fresh in the morning for best results.
