Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice bagels horizontally and scoop out some inner bread to make space for filling.
- In a bowl, beat eggs with salt and pepper. Mix in shredded cheese, chives, and cream cheese.
- Add smoked salmon pieces if desired. Spoon filling evenly into bagels.
- Place stuffed bagels on baking sheet and bake 15–18 minutes until eggs are set.
- Optionally broil 1–2 minutes for a golden top. Serve warm.
Notes
Prepare bagels ahead and refrigerate; bake fresh in the morning for best results.
