Ingredients
  

Meatloaf
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs large
  • 1 onion finely minced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
Filling
  • 1.5 cups shredded mozzarella low-moisture
  • 0.5 cup sun-dried tomatoes chopped
  • 0.25 cup fresh basil chopped
Glaze
  • 0.33 cup tomato paste
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tbsp brown sugar

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Combine beef, breadcrumbs, eggs, onion, garlic, tomato paste, Worcestershire sauce, seasonings, salt, pepper, and paprika.
  3. Mix mozzarella, sun-dried tomatoes, and basil for the filling.
  4. Press half the meat mixture into the pan and create a shallow well.
  5. Add filling and spread evenly.
  6. Cover with remaining meat, sealing edges completely.
  7. Mix glaze ingredients and spread on top.
  8. Bake uncovered for 45–55 minutes or until internal temperature reaches 160°F (71°C).
  9. Let rest 10 minutes before slicing.

Notes

For extra richness, drizzle warm marinara sauce over each slice before serving. Leftovers reheat beautifully.
