Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
Filling
  • 2 cups mashed sweet potatoes
  • 1 cup brown sugar packed
  • 3 eggs large
  • 0.75 cup evaporated milk
  • 0.25 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt

Equipment

  • Mixing bowls
  • 9x13-inch baking pan
  • Whisk

Method
 

  1. Preheat oven to 350°F (175°C) and line baking pan with parchment.
  2. Mix crust ingredients and press into pan.
  3. Bake crust 12–15 minutes until lightly golden.
  4. Whisk sweet potato filling ingredients until smooth.
  5. Pour filling over warm crust.
  6. Bake 35–40 minutes until set.
  7. Cool completely and refrigerate before slicing.

Notes

Chilling improves texture and slicing.
