Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut cold butter into the flour mixture using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Make a well in the center and pour in cold buttermilk (and honey if using). Gently stir until dough just comes together.
- Turn dough onto a lightly floured surface and fold 2-3 times to create layers. Pat dough to about 1-inch thickness.
- Use a biscuit cutter to cut biscuits, pressing straight down without twisting. Place on prepared baking sheet.
- Bake 12-15 minutes until golden brown. Remove and cool slightly before serving.
Notes
Optional: add herbs, cheese, or spices to the dough for variety. Keep butter cold for best results.
