Ingredients
  

  • 1.5 cups warm water 110°F
  • 1 packet active dry yeast 2 ¼ tsp
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 4 tbsp unsalted butter melted, divided
  • 10 cups water
  • 0.66 cup baking soda
  • 1 large egg beaten for egg wash
  • coarse sea salt for topping

Method
 

  1. Mix warm water, yeast, and sugar. Let sit until foamy.
  2. Add flour, salt, and 2 tbsp butter. Knead dough until smooth. Let rise 30–40 minutes.
  3. Roll dough into ropes, cut into 1-inch pieces.
  4. Boil pretzel bites in water with baking soda for 30 seconds.
  5. Place on baking sheet, brush with egg wash, sprinkle with salt, bake 12–14 minutes.
  6. Brush with melted butter before serving.

Notes

For sweet pretzel bites, brush with butter and toss in cinnamon sugar after baking.
