Method
- Combine soy sauce, mirin, sake, sugar, and sesame oil in saucepan. Heat and simmer 2–3 minutes until slightly thickened.
- Thread chicken onto bamboo skewers with small gaps between pieces.
- Cook skewers: Grill or broil 3–4 min per side, brushing with tare sauce. Alternatively, pan-cook on medium heat 3–4 min per side.
- Sprinkle sesame seeds and chopped green onions on cooked skewers.
- Serve immediately with rice or as appetizers.
Notes
Baste skewers frequently for glossy glaze. Uniform chicken pieces cook evenly.
