Ingredients
  

Rolls
  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese softened
  • 1.5 cups almond flour
  • 2 eggs large
  • 1 tsp baking powder
  • 0.5 tsp salt
Filling
  • 1 lb ground beef
  • 1 onion medium, thinly sliced
  • 1 green bell pepper medium, thinly sliced
  • 1 cup shredded provolone or cheddar cheese
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 tbsp olive oil

  • Baking sheet

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
  2. Combine shredded mozzarella and cream cheese in microwave-safe bowl. Microwave 45–60 seconds until softened. Stir in almond flour, baking powder, salt, and eggs to form dough.
  3. Roll dough into rectangle between parchment sheets. Slice into portions for rolls. Bake 10–12 minutes until golden.
  4. Heat olive oil in skillet, sauté onions and bell peppers 3–4 minutes. Add ground beef, garlic powder, salt, and pepper. Cook until beef is browned.
  5. Slice baked rolls horizontally, fill with beef mixture. Top with shredded cheese, broil 1–2 minutes if desired.
  6. Serve warm. Store leftovers in airtight container in fridge for 3–4 days.

Notes

Roll dough thin for soft yet sturdy rolls. Use provolone for authentic Philly flavor. Broil cheese on top for extra melt.
