Ingredients
  

Salad
  • 2 cups fresh pineapple diced
  • 2 medium cucumbers thinly sliced
  • 0.5 small red onion thinly sliced
  • 0.25 cup fresh cilantro leaves roughly chopped
  • 1 avocado diced, optional
  • 0.25 cup lime juice about 2 limes
  • 1 tbsp honey or agave syrup
  • 1 tbsp extra virgin olive oil
  • to taste salt and black pepper
  • 0.25 tsp chili flakes optional

Method
 

  1. Prepare the fruits and vegetables: Wash the cucumbers and pineapple. Dice the pineapple and thinly slice the cucumbers. Slice the red onion. Dice avocado just before mixing.
  2. Mix the salad base: In a large mixing bowl, combine pineapple, cucumber, red onion, and cilantro (or mint). Gently fold in avocado if using.
  3. Make the dressing: Whisk together lime juice, honey, olive oil, salt, black pepper, and chili flakes until well combined.
  4. Toss the salad: Pour dressing over salad and gently toss until all ingredients are coated. Let sit 5–10 minutes for flavors to meld.
  5. Serve and garnish: Transfer to a serving bowl. Garnish with extra herbs, lime wedges, or chili flakes as desired.

Notes

Keep avocado separate until ready to serve for best presentation.
