- Prepare the fruits and vegetables: Wash the cucumbers and pineapple. Dice the pineapple and thinly slice the cucumbers. Slice the red onion. Dice avocado just before mixing.
- Mix the salad base: In a large mixing bowl, combine pineapple, cucumber, red onion, and cilantro (or mint). Gently fold in avocado if using.
- Make the dressing: Whisk together lime juice, honey, olive oil, salt, black pepper, and chili flakes until well combined.
- Toss the salad: Pour dressing over salad and gently toss until all ingredients are coated. Let sit 5–10 minutes for flavors to meld.
- Serve and garnish: Transfer to a serving bowl. Garnish with extra herbs, lime wedges, or chili flakes as desired.
Notes
Keep avocado separate until ready to serve for best presentation.
