Baked Potatoes
  • 4 large russet potatoes scrubbed and pierced
  • Olive oil for brushing
  • Salt to taste
Turkey Sloppy Joe Filling
  • 1 lb ground turkey
  • 1 small onion finely chopped
  • 1 bell pepper finely chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
Topping
  • 1 cup shredded cheddar cheese
  • Fresh parsley chopped, optional

Method
 

  1. Preheat oven to 400°F (200°C). Brush potatoes with olive oil and sprinkle with salt. Place directly on oven rack and bake 45–60 minutes until tender.
  2. In a skillet over medium heat, cook ground turkey until browned, then drain excess liquid.
  3. Add onion, bell pepper, and garlic to the skillet. Cook 5–7 minutes until softened.
  4. Stir in tomato sauce, ketchup, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper. Simmer 8–10 minutes until thickened.
  5. Remove baked potatoes from oven and cut a slit down the center. Fluff the insides with a fork.
  6. Spoon turkey sloppy joe mixture into each potato. Top with shredded cheddar cheese.
  7. Return stuffed potatoes to oven for 5–7 minutes until cheese melts and bubbles.
  8. Garnish with chopped parsley and serve immediately.

Notes

For faster prep, microwave potatoes before stuffing. Adjust seasoning to taste or add hot sauce for extra spice.
