- Preheat oven to 400°F (200°C). Brush potatoes with olive oil and sprinkle with salt. Place directly on oven rack and bake 45–60 minutes until tender.
- In a skillet over medium heat, cook ground turkey until browned, then drain excess liquid.
- Add onion, bell pepper, and garlic to the skillet. Cook 5–7 minutes until softened.
- Stir in tomato sauce, ketchup, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper. Simmer 8–10 minutes until thickened.
- Remove baked potatoes from oven and cut a slit down the center. Fluff the insides with a fork.
- Spoon turkey sloppy joe mixture into each potato. Top with shredded cheddar cheese.
- Return stuffed potatoes to oven for 5–7 minutes until cheese melts and bubbles.
- Garnish with chopped parsley and serve immediately.
Notes
For faster prep, microwave potatoes before stuffing. Adjust seasoning to taste or add hot sauce for extra spice.
