Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
Filling
  • 32 oz cream cheese softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 4 eggs large
  • 2 apples peeled, cored, diced
Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter cold, cubed

Method
 

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into pan and bake 10 minutes.
  3. Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing gently. Fold in diced apples.
  5. Pour filling over crust.
  6. Mix flour, brown sugar, cinnamon, nutmeg. Cut in cold butter until coarse crumbs form.
  7. Sprinkle crumble over cheesecake. Bake in water bath for 55–65 minutes.
  8. Cool in oven for 1 hour, then refrigerate 6+ hours before serving.

Notes

Serve with caramel drizzle or whipped cream for extra flavor. Store covered in fridge up to 5 days.
