Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat chicken breasts dry and pound to even thickness.
- Set up three shallow dishes: flour, beaten eggs, and panko-Parmesan mixture with spices.
- Dredge chicken in flour, dip in eggs, then coat with panko-Parmesan mixture.
- Place coated chicken on baking sheet and drizzle with olive oil or butter.
- Bake 20–25 minutes until internal temperature reaches 165°F (74°C) and coating is golden.
- Rest for 5 minutes before serving. Garnish with parsley or lemon wedges.
Notes
Pounding chicken ensures even cooking and prevents dryness. Fresh Parmesan gives best flavor.
