  • 4 boneless skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil or melted butter

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry and pound to even thickness.
  3. Set up three shallow dishes: flour, beaten eggs, and panko-Parmesan mixture with spices.
  4. Dredge chicken in flour, dip in eggs, then coat with panko-Parmesan mixture.
  5. Place coated chicken on baking sheet and drizzle with olive oil or butter.
  6. Bake 20–25 minutes until internal temperature reaches 165°F (74°C) and coating is golden.
  7. Rest for 5 minutes before serving. Garnish with parsley or lemon wedges.

Notes

Pounding chicken ensures even cooking and prevents dryness. Fresh Parmesan gives best flavor.
