Ingredients
  

Crust
  • 2 cups gingerbread cookie crumbs
  • 2 tbsp cocoa powder
  • 0.5 cup dairy-free butter melted
  • 1 tbsp molasses
Filling
  • 8 oz dark vegan chocolate chopped
  • 1 cup coconut milk full-fat
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Mix crust ingredients and press into tart pan.
  2. Bake crust 10 minutes and cool completely.
  3. Heat coconut milk until steaming.
  4. Pour over chocolate and stir until smooth.
  5. Add maple syrup, vanilla, and salt.
  6. Pour filling into crust and chill 4 hours.

Notes

Chill overnight for best slicing texture.
