Ingredients
  

Chili Base
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 cups cooked shredded chicken
  • 2 apples peeled and diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups white cheddar cheese shredded

Method
 

  1. Heat olive oil in a large pot over medium heat. Cook onion until soft.
  2. Add garlic and cook until fragrant.
  3. Stir in chicken and apples, cooking briefly.
  4. Pour in chicken broth and bring to a simmer.
  5. Reduce heat and stir in cream and seasonings.
  6. Simmer until apples are tender.
  7. Gradually stir in white cheddar until melted.
  8. Serve hot with desired garnishes.

Notes

For best texture, add cheese over low heat and avoid boiling.
