Ingredients
  

  • 24 ladyfingers
  • 16 oz mascarpone cheese softened
  • 1 cup heavy cream
  • 6 oz white chocolate chopped or chips
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries plus extra for garnish
  • 1 cup coffee or coffee-liqueur

Method
 

  1. Brew coffee and let cool.
  2. Melt white chocolate and let cool slightly.
  3. Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth.
  4. Fold melted white chocolate into mascarpone mixture.
  5. Dip ladyfingers briefly in coffee and layer in serving dish.
  6. Spread mascarpone cream over ladyfingers and add raspberries.
  7. Repeat layers and top with cream, raspberries, and chocolate shavings.
  8. Refrigerate at least 4 hours or overnight before serving.

Notes

Use fresh or frozen raspberries. Make ahead for best flavor.
