Ingredients
  

Raspberry Sauce
  • 2 cups raspberries
  • 0.33 cup sugar
  • 1 tbsp lemon juice
  • 0.25 cup water
Cream Filling
  • 250 g mascarpone
  • 1 cup heavy cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 150 g white chocolate melted and cooled
Assembly
  • 24-30 ladyfingers
  • 1 cup milk for dipping
  • fresh raspberries for garnish
  • white chocolate shavings for topping

Method
 

  1. Cook raspberries, sugar, lemon juice, and water until soft. Cool.
  2. Beat heavy cream to soft peaks.
  3. Mix mascarpone, powdered sugar, vanilla, and melted white chocolate.
  4. Fold whipped cream into mascarpone mixture.
  5. Dip ladyfingers briefly in milk.
  6. Layer ladyfingers, cream, and raspberry sauce.
  7. Repeat layers and smooth the top.
  8. Chill at least 4 hours or overnight.
  9. Decorate with raspberries and white chocolate before serving.

Notes

For cleaner slices, chill overnight. Can also be frozen 30 minutes before serving for a firmer texture.
