- Prepare all fruits: peel, core, and dice apples and pears. Segment oranges, halve grapes, and prepare kiwi if using. Combine all fruits with pomegranate seeds in a large mixing bowl.
- In a small bowl, whisk together Greek yogurt, honey, vanilla extract, and ground cinnamon until smooth.
- Pour dressing over the fruit mixture and gently toss to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Just before serving, garnish with chopped nuts and fresh mint leaves.
